J-BusinessDirectory - Change options of "select element" with jQuery

In some cities have only a few categories and I need to show that it works in this way: 

City1> only returns categories city1 
City2> only returns categories city2 
etc .... 

How can I dynamically change options in "select element" with jQuery?
