Please find our answer below.

1. If you have changed the LNG_WIRE_TRANSFER text identifier please change also the name of the payment processor.
2. The country fields can be hidden only by code modifications. The billing details file is located on {joomla}/components/com_jbusinessdirectory/views/billingdetails/tmpl/edit.php
