I want to change the text in the search box.
At the moment it is saying: ex.auto, hotel, restaurant...

You have to go to JBD backend J-BusinessDirectory--General settings --Languages --English version find the text there and there make the custom changes under the first standard english languages file. **Make that in second column for customizations otherwise its gone next time you do an update.
Joomla also have language override that you can do..its standard ..administrator/index.php?option=com_languages&view=overrides
