Can you show me how can I modify  the policy to display at screen Guest Information (see picture). And where to use customer's username ? Thanks

You can change the text in the translation file located at administrator\components\com_jhotelreservation\assets\language\en-GB\en-GB.com_jhotelreservation.ini. Search for the text and replace it with what you want. 

The email is used as a username for the Joomla account that is beign created. Currently the user account is used within the application, the client has no access to it.
